The BlueGreenFood project aims to ensure stable supply of seaweed biomass by developing innovative sustainable preservation technologies and processes for producing healthy products and ingredients with high acceptance in European food markets, thereby increasing the supply of blue food, by utilizing new, and sustainable marine food systems. The project aims to advance knowledge and technology to support the European seaweed industry parallelly introducing agricultural plant-based proteins (from different seeds) and microalgae to meet the increasing demand for proteins. Because fresh seaweed spoils quickly, the project focuses on cost- and energy-efficient solutions, especially fermentation in cold and salty conditions. The project focuses on full utilisation of the biomass and also explores plant-based proteins from seeds and microalgae to meet the growing protein demand.
