The main objectives of the project are: i) to improve the biochemical composition of bivalve molluscs produced in aquaculture, after purification; (ii) improve the organoleptic characteristics of purified bivalves; iii) reduce mortality during the purification process; and iv) increase the shelf life of the purified bivalves. We will study 4 species of bivalve molluscs with commercial value: Ruditapes decussatus, Solen marginatus, Crassostrea gigas, Cerastoderma edule, and develop methodologies for each species.
